Description

A cozy dish that captures the essence of fall with tender chicken, sweet apples, and a flavorful cider sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil or butter
  • 1 large onion, thinly sliced
  • 2 apples (like Honeycrisp or Gala), thinly sliced
  • 1 cup apple cider (not vinegar)
  • ½ cup chicken broth
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and black pepper, to taste

Instructions

  1. Start by generously seasoning the chicken breasts with salt and black pepper on both sides.
  2. In your skillet, heat 2 tablespoons of olive oil or butter over medium-high heat. Sear the chicken breasts for about 3–4 minutes on each side until they develop a golden-brown crust. Remove from skillet and set aside.
  3. Add the sliced onion to the skillet and sauté for about 3–4 minutes until soft and translucent.
  4. Stir in the apple slices and cook for another 2–3 minutes until just tender.
  5. Pour in the apple cider and chicken broth, scraping any browned bits off the bottom of the skillet.
  6. Add thyme and return the chicken to the pan. Cover and simmer for 8–10 minutes until chicken reaches 165°F (75°C) and sauce thickens.
  7. Serve over mashed potatoes or rice, spooning the cider sauce over the top.

Notes

Make sure not to overcrowd the skillet when searing the chicken; doing so may cause it to steam rather than sear.
