- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil or butter
- 1 large onion, thinly sliced
- 2 apples (like Honeycrisp or Gala), thinly sliced
- 1 cup apple cider (not vinegar)
- ½ cup chicken broth
- 1 tsp fresh thyme (or ½ tsp dried)
- Salt and black pepper, to taste
Instructions
- Start by generously seasoning the chicken breasts with salt and black pepper on both sides.
- In your skillet, heat 2 tablespoons of olive oil or butter over medium-high heat. Sear the chicken breasts for about 3–4 minutes on each side until they develop a golden-brown crust. Remove from skillet and set aside.
- Add the sliced onion to the skillet and sauté for about 3–4 minutes until soft and translucent.
- Stir in the apple slices and cook for another 2–3 minutes until just tender.
- Pour in the apple cider and chicken broth, scraping any browned bits off the bottom of the skillet.
- Add thyme and return the chicken to the pan. Cover and simmer for 8–10 minutes until chicken reaches 165°F (75°C) and sauce thickens.
- Serve over mashed potatoes or rice, spooning the cider sauce over the top.
Notes
Make sure not to overcrowd the skillet when searing the chicken; doing so may cause it to steam rather than sear.
