  • 300 g double cream brie cheese
  • 8 slices sourdough bread
  • 2 cups fresh blackberries
  • 6 tablespoons sugar
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh thyme, chopped
  • Butter, as needed for grilling
  • Pinch of kosher salt

Instructions

  1. Begin your culinary adventure by creating the delicious blackberry balsamic jam. In a medium-sized saucepan, combine your fresh blackberries, balsamic vinegar, sugar, lemon juice, and a pinch of kosher salt.
  2. Heat your saucepan over medium-high heat until the mixture reaches a gentle boil. Start mashing the blackberries gently with a fork or a potato masher. Once boiling, reduce the heat to a simmer and allow it to cook for about 7-10 minutes, stirring often.
  3. After simmering, you’ll notice the mixture thickening. Once it reaches desired consistency, remove it from the heat and let it cool completely.
  4. Spread a generous layer of brie on four slices of sourdough bread. On top of the brie, add a good dollop of the cooled blackberry balsamic jam. Sprinkle some freshly chopped thyme over the jam to enhance the flavor. Top with the remaining slices of sourdough to create your sandwiches.
  5. In your preheated frying pan, add a little butter and let it melt. Once melted, carefully place the sandwiches in the pan. Grill them for about 3-4 minutes on each side, or until they are golden brown and crispy.
  6. Once both sides of your sandwiches are beautifully toasted and the brie is delightfully melty, remove them from the pan. Cut in half, serve immediately, and enjoy your gourmet creation!
