Description

A delightful galette featuring a golden, flaky pastry filled with oozy Brie cheese, tart cranberries, and crunchy walnuts, topped with a spicy-sweet honey drizzle.

Ingredients

Scale
  • 1 sheet puff pastry (250g), thawed
  • 150g Brie cheese, sliced
  • 1/2 cup fresh or dried cranberries (60g)
  • 1/3 cup toasted walnuts, chopped (40g)
  • 1 egg, beaten (for egg wash)
  • 2 tablespoons honey (40g)
  • 1/2 teaspoon chili flakes (adjust to taste)
  • Fresh thyme leaves, for garnish

Instructions

  1. Begin by preheating your oven to 400°F (200°C). This step is crucial as it allows the pastry to bake properly, becoming golden and flaky. While the oven is warming up, prepare your baking sheet by lining it with parchment paper. This will prevent sticking and make for easy cleanup later on.
  2. Once your oven is preheated, take your thawed puff pastry and roll it out gently on a lightly floured surface. Aim for a circular shape, and ensure it’s slightly larger than before, as you will need to fold over the edges. Transfer this rolled pastry onto your prepared baking sheet.
  3. Now, it’s time to layer up! Start by arranging the Brie cheese slices in the center of the pastry, leaving about a 2-inch (4–5 cm) border around the edges. This creates a beautiful base for your filling. Next, sprinkle the cranberries and chopped walnuts evenly over the Brie, adding both flavor and texture.
  4. Begin folding the edges of the pastry over the filling. You can create pleats for a decorative edge, ensuring the filling is partially enclosed. After folding, brush the exposed edges with beaten egg for that gorgeous golden hue when baked.
  5. Place the galette in your preheated oven. Bake for about 20 to 25 minutes, or until it turns gloriously golden and the puff pastry has risen beautifully. This is the moment when the scents of buttery pastry and melted Brie fill your kitchen.
  6. While the galette is baking, prepare the hot honey drizzle. In a small saucepan, gently heat the honey and chili flakes over low heat for about 2 to 3 minutes. This step will infuse the honey with a warm, spicy kick that perfectly complements the sweetness of the cranberries.
  7. Once the galette is out of the oven and cooled for a brief moment, drizzle the spicy honey over the top. Don’t forget to finish with a sprinkle of fresh thyme leaves to elevate the presentation and enhance the flavor with a hint of earthiness.

Notes

Leftovers can be stored in an airtight container in the refrigerator for a few days and enjoyed cold or reheated.
