  • 45 ripe plums, halved and pitted
  • ¼ cup unsalted pistachios, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey (optional)
  • 23 sprigs fresh thyme, leaves only
  • Sea salt, to taste
  • Cracked black pepper, to taste (optional)

Instructions

  1. Begin by preheating your oven to 400°F (200°C). This temperature is ideal for roasting fruits, as it allows them to become tender while developing a caramelized sweetness. Make sure to allow sufficient time for the oven to reach this temperature before placing the plums inside.
  2. Prepare your plums by halving them and removing the pits. Place the plum halves cut-side up on a baking sheet lined with parchment paper. Drizzle them carefully with extra virgin olive oil, and if you’re adding honey for a touch of sweetness, drizzle that over as well. Roast the plums in the preheated oven for about 20 to 25 minutes. Keep an eye on them — you’ll know they’re ready when they’re soft and their natural sugars have begun to caramelize, enriching their flavor.
  3. Once the plums are roasted, remove them from the oven and let them cool for a few minutes. Meanwhile, prepare your serving platter by placing the burrata in the center. This beautiful cheese will act as the centerpiece of your dish. Now, arrange the warm, roasted plums around the burrata, allowing their hues to create a stunning visual display.
