Description

Chickpea and Sweet Potato Tacos with Cilantro Lime Slaw are a delicious plant-based meal.


Ingredients

  • 2 medium sweet potatoes, diced
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • Salt and pepper, to taste
  • 8 small corn tortillas

Instructions

  1. Preheat your oven to 400°F (200°C). In a large mixing bowl, toss diced sweet potatoes and chickpeas with olive oil and spices. Spread on a baking sheet and roast for 20-25 minutes.
  2. Prepare the slaw by combining shredded cabbage, chopped cilantro, lime juice, olive oil, honey, and a pinch of salt. Mix well and chill for 10-15 minutes.
  3. Warm tortillas in a dry skillet for 30 seconds on each side.
  4. Assemble tacos by adding the roasted mixture and slaw to each tortilla.
  5. Serve with optional toppings like avocado or hot sauce and lime wedges.

Notes

For a vegan alternative, replace honey in the slaw with maple syrup.
