- 2 chicken breasts
- 2 cups fresh greens (spinach or arugula)
- 1 cup diced tomatoes
- Chimichurri Marinade/Sauce:
- 1 cup chopped fresh parsley
- 4 garlic cloves, minced
- ¼ cup red wine vinegar
- ½ cup olive oil
- ½ tsp red pepper flakes
- Salt and pepper, to taste
- Garlic Sauce:
- 1 cup mayonnaise
- ½ cup sour cream or Greek yogurt
- 1 tbsp lemon juice
- 1 garlic clove, minced
- Chopped herbs (optional)
Instructions
- Start by preparing the marinade for the chicken. In a mixing bowl, combine the olive oil, chopped parsley, minced garlic, red wine vinegar, salt, and pepper. Stir this mixture until it’s well-combined. Coat each chicken breast in the marinade and allow to marinate for at least 30 minutes.
- While your chicken marinates, prepare the chimichurri sauce by blending the remaining parsley, minced garlic, red pepper flakes, red wine vinegar, and olive oil until chunky. Adjust seasoning with salt.
- Prepare the creamy garlic sauce by whisking together mayonnaise, sour cream, lemon juice, minced garlic, and chopped herbs in a bowl. Chill while finishing the rest of the dish.
- Grill your marinated chicken on a preheated grill for 5–7 minutes per side until the internal temperature reaches 165°F (74°C).
- Once the chicken has rested, slice it into strips and assemble your bowls by layering greens, diced tomatoes, sliced chicken, chimichurri sauce, and garlic sauce.
Notes
Marinating the chicken for up to 2 hours yields more flavor. Experiment with different herbs in the garlic sauce.
