A delicious and nutritious cottage cheese and spinach crustless quiche.
Ingredients

- 1 tbsp olive oil
- 1 small onion, diced
- ½ bell pepper, diced
- 2 cups chopped baby spinach
- 1½ cups cottage cheese
- 4 large eggs
- 1 cup shredded cheddar (or half cheddar, half mozzarella)
- ½ cup milk
- ½ tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a frying pan, heat the olive oil over medium heat. Sauté the diced onion and bell pepper for 3–4 minutes until tender. Add chopped spinach and cook for 2–3 minutes until wilted. Season lightly with salt and pepper.
- In a large mixing bowl, whisk together the eggs, milk, and cottage cheese. Sprinkle in garlic powder, Italian seasoning, and a pinch of salt and pepper.
- Stir in sautéed vegetables and shredded cheese until well combined.
- Pour the mixture into a greased 9-inch pie dish and bake for 40–45 minutes until the top is golden and the center is set.
Notes
Squeeze excess water from the spinach before adding to prevent a soggy quiche. For a firmer quiche, bake an additional 5 minutes.
