Ingredients

  • 1 medium onion, diced
  • 2 medium carrots, peeled and diced
  • 1 cup chopped celery
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon ground black pepper
  • ⅛ teaspoon ground nutmeg
  • 4 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup water
  • 2 boneless, skinless chicken breasts
  • 1 cup whole milk
  • 4 oz cream cheese, softened
  • ½ cup grated Parmesan cheese
  • 3 oz baby spinach
  • 68 uncooked lasagna noodles, broken into pieces

Instructions

  1. Begin your cooking adventure by melting the butter in a large pot over medium heat. Once the butter is melted, toss in the diced onion, carrots, and celery. Sauté these veggies for about 3–4 minutes, allowing them to become tender. Then, add the minced garlic and cook for an additional minute until fragrant.
  2. Next, sprinkle in the Italian seasoning, dried basil, salt, pepper, and ground nutmeg. Stir in the flour and whisk together until everything is blended nicely.
  3. Pour in the chicken broth and water. Stir everything together and bring the mixture to a boil. Once boiling, add the chicken breasts into the pot.
  4. After simmering, remove the chicken breasts from the pot and let them cool slightly. Shred the chicken into bite-sized pieces.
  5. In a separate pot, bring some salted water to a boil and cook the broken lasagna noodles according to the package instructions until al dente. Drain and set aside.
  6. Return the soup to a simmer over medium heat and stir in the whole milk and softened cream cheese. Continue stirring until smooth, about 3–5 minutes.
  7. Finally, stir in the grated Parmesan cheese, baby spinach, and shredded chicken. Allow the soup to simmer for another 3 minutes before serving.
