Ingredients

  • 4 cod fillets (6 oz each)
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Start by patting the cod fillets dry using paper towels. Season both sides with salt and pepper.
  2. In a large bowl, combine the panko breadcrumbs with the Parmesan cheese and seasonings.
  3. Mix mayonnaise, Dijon mustard, and lemon juice in another bowl.
  4. Brush one side of each cod fillet with mayonnaise and press into the breadcrumb mixture.
  5. Preheat your air fryer to 400°F (200°C).
  6. Lightly spray the air fryer basket with oil. Arrange fillets and air fry for 10-12 minutes.
  7. Sprinkle fresh parsley on top and serve immediately.

If you prefer, you can substitute Greek yogurt for mayonnaise to reduce calories without sacrificing flavor.
