  • 2 cups cubed butternut squash (about 300g)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 3 tablespoons honey
  • 1 teaspoon crushed red pepper flakes
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Begin by preheating your oven to 400°F (200°C). While the oven reaches the perfect temperature, wash and peel your butternut squash. Cut it into bite-sized cubes and place them into a large mixing bowl. Drizzle olive oil over the squash cubes and sprinkle with garlic powder, onion powder, salt, and black pepper. Toss until the squash is evenly coated in the oil and spices.
  2. Spread the seasoned squash in a single layer on the prepared baking sheet. Bake the squash in the preheated oven for about 25 to 30 minutes, or until tender and lightly crisped.
  3. While the squash is roasting, prepare your breading station by setting up three shallow dishes. Pour all-purpose flour into the first dish, beaten eggs into the second, and breadcrumbs into the final dish.
  4. Once the roasted squash has cooled slightly, take one cube at a time and first coat it in flour, then dip it into the beaten eggs, and finally press it into the breadcrumbs until coated evenly.
  5. In a skillet, heat a few tablespoons of oil over medium heat. Fry the breaded squash cubes in batches for about 2 to 3 minutes on each side, or until golden brown and crispy.
  6. In a small saucepan, combine honey and crushed red pepper flakes. Warm over low heat for about 2 to 3 minutes, then stir in crumbled feta cheese until it melts and becomes creamy.
  7. Arrange the crispy butternut squash bites on a serving platter. Drizzle the hot honey feta sauce over the bites generously, and finish with fresh chopped parsley.
