  • 1 cup dill pickle juice
  • ½ cup grated Parmesan cheese
  • 1 cup seasoned breadcrumbs

  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. To start, place the chicken breasts in a bowl and pour in the dill pickle juice. Allow the chicken to marinate for at least 30 minutes in the refrigerator.
  2. While the chicken marinates, set up your three breading stations. In the first bowl, combine the all-purpose flour with garlic powder, onion powder, salt, and pepper. In the second bowl, whisk together the eggs until well beaten. In the third bowl, mix the seasoned breadcrumbs with the grated Parmesan cheese.
  3. On medium heat, add enough oil to your skillet to cover the bottom, approximately 1/4 inch deep. Allow the oil to heat until it shimmers.
  4. Once the chicken has marinated, dredge the chicken in the seasoned flour first, then dip into the egg wash, and finally transfer to the breadcrumb-Parmesan mixture.
  5. Carefully place the breaded chicken breasts in the hot oil, fry for about 5–7 minutes until golden brown.
  6. Once cooked, transfer the chicken to a plate lined with paper towels to absorb any excess oil and let rest for 5–10 minutes before serving.
