  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons honey
  • 1 teaspoon Dijon mustard (optional)
  • 1 small garlic clove, finely minced (optional)
  • Red pepper flakes (optional, for garnish)

Instructions

  1. Begin by preheating your oven to 425°F (220°C). This high temperature is crucial for achieving that crispy texture that makes Brussels sprouts so appealing. While the oven heats up, you can take the time to prepare your Brussels sprouts.
  2. Trim the stems of the Brussels sprouts and cut them in half. This exposure allows for a greater surface area, which means more of that delicious caramelization. Once halved, dry them thoroughly to remove any excess moisture which can prevent them from crisping up. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper until they’re evenly coated.
  3. Next, lay the sprouts cut-side down on the previously lined baking sheet. By positioning them cut-side down, you maximize the opportunity for caramelization. Roast them in the preheated oven for 20–25 minutes. This time may vary depending on your oven, but you’ll want to flip them halfway to ensure they cook evenly and achieve that golden brown color.
  4. While the Brussels sprouts are roasting, you can prepare the delightful glaze. In a small saucepan, combine the balsamic vinegar, honey, and Dijon mustard (if you’re using it). Heat over low to medium heat for about 2–3 minutes, allowing the mixture to simmer gently. If you’ve chosen to add garlic, stir it in right as you remove the glaze from the heat. This briefly cooks the garlic without burning it, infusing the glaze with flavor.
  5. Once the Brussels sprouts are perfectly roasted and crispy, take them out of the oven. Immediately toss them with the warm glaze to coat evenly. This will allow the sprouts to absorb that sweet and tangy flavor while they’re still hot. For a pop of color and a hint of spice, sprinkle some red pepper flakes on top before serving.
