- 1 ½ cups crushed chocolate sandwich cookies (like Oreos)
- ¼ cup melted butter
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup semi-sweet chocolate chips
- ½ cup caramel sauce (plus extra for drizzle)
- 1 teaspoon sea salt flakes
- Extra chocolate chips (for garnish)
- Whipped cream (optional, for topping)
Instructions
- Preheat your oven to 325°F (163°C).
- Combine crushed chocolate sandwich cookies with melted butter and press into a greased springform pan to form a crust. Bake for 10 minutes and cool.
- Beat together cream cheese and granulated sugar until smooth. Add in vanilla extract and beaten eggs one at a time.
- Fold in chocolate chips and pour half of the cheesecake batter over the crust. Drizzle ¼ cup of caramel sauce on top, then add the remaining batter.
- Bake for 50-60 minutes until edges are golden. Cool completely.
- Drizzle extra caramel and sprinkle sea salt on top before chilling for at least 4 hours.
- Serve slices with caramel sauce and whipped cream on top.
Notes
You can prepare this cheesecake a day in advance to improve flavor and texture. Refrigerate leftovers in an airtight container for up to a week.
