- 1 lb ground chicken
- 1 egg
- ½ yellow onion, diced
- ½ Granny Smith apple, peeled and diced
- 2 oz cheddar cheese, grated
- ¼ cup walnuts, finely chopped
- 1 tbsp olive oil
- 1 tsp soy sauce
- ½ cup fine breadcrumbs
- ¼ cup fresh parsley, chopped
- 1-inch piece fresh ginger, grated
- 1 tsp salt
- Black pepper and cayenne, to taste
- 2 large (or 3 medium) sweet potatoes
- 2 tbsp butter
- 2 tbsp maple syrup
- ½ tsp cinnamon
- ½ tsp coriander
- ½ tsp cumin
- ½ tsp nutmeg
- Salt and cayenne, to taste
Instructions
- Start by preparing the sweet potatoes. Preheat your oven to 400°F. Wash and pierce the sweet potatoes with a fork to allow steam to escape during the baking process. Place them on a baking sheet lined with parchment and bake for about 60 to 75 minutes, or until they are fork-tender.
- While the sweet potatoes are baking, heat one tablespoon of olive oil in a medium frying pan over medium heat. Add the diced onion and Granny Smith apple to the pan. Sauté them together for about 5 to 7 minutes until they soften and become fragrant.
- In a large mixing bowl, combine the ground chicken, egg, fine breadcrumbs, grated cheddar cheese, finely chopped walnuts, fresh parsley, grated ginger, and the cooled apple-onion mixture. Form the mixture into 2-inch meatballs and place them on a greased baking sheet.
- With your oven preheated, place the baking sheet with the meatballs on the middle rack. Bake for about 15 minutes, or until the meatballs are golden brown and cooked through.
- Once baked, peel the sweet potatoes and transfer them to a mixing bowl. Add 2 tablespoons of butter, 2 tablespoons of maple syrup, and the spices: cinnamon, coriander, cumin, nutmeg, along with salt and cayenne to taste. Mash the mixture with a potato masher until smooth.
Notes
Make sure to finely chop the walnuts to avoid a gritty texture in the meatballs.
