- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
- 1 tablespoon grated fresh ginger
- 2 garlic cloves, crushed
- 1.2 cups (300ml) coconut milk
- Juice and zest of 1 large lemon
Instructions
- Begin by setting your oven to preheat at 350°F (180°C). While the oven heats up, take your cod fillets and season them generously with salt and black pepper.
- In a medium skillet, heat the olive oil over medium heat. Once hot, add the onions and sauté until soft and translucent, about 4-5 minutes. Add the crushed garlic and grated ginger, cooking for an additional minute until fragrant.
- Pour in the coconut milk and stir well to combine it with the onion mixture. Squeeze in the juice of one large lemon and add the zest. Let simmer gently for about 2 minutes.
- Place the seasoned cod fillets in a baking dish. Pour the coconut lemon sauce over the top. Transfer to the oven and bake for 20–25 minutes or until the cod flakes easily with a fork.
