Description

Baked Cod with Lemon-Dill Sauce is a delightful combination of flaky cod and zesty sauce, perfect for weeknight dinners or entertaining guests.

Ingredients

Scale
  • 4 cod fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 tsp paprika (optional)
  • Lemon slices, for garnish
  • 1/3 cup plain Greek yogurt (or sour cream)
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • 2 tbsp mayonnaise (optional, for creamier texture)
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • 1 small garlic clove, minced (optional)
  • Salt and pepper, to taste

Instructions

  1. Start your journey to a delicious meal by preheating your oven to 400°F (200°C). While the oven heats, prepare your baking sheet by lining it with parchment paper or lightly greasing it to prevent the cod from sticking. Preparing the oven and baking sheet first ensures everything is set and ready for when you season the cod, resulting in a smooth cooking process.
  2. Ensure the cod fillets are patted dry to remove excess moisture. This step helps the seasonings adhere better and contributes to a beautiful golden crust when baked. Next, brush each fillet generously with olive oil and sprinkle them with garlic powder, salt, pepper, and optional paprika for an extra kick. With the seasoned fillets placed on the baking sheet, they are ready for the oven!
  3. Now, pop the seasoned cod fillets into your preheated oven and allow them to bake for 12 to 15 minutes. The key indicator of doneness is when the fish flakes easily with a fork, and an internal temperature of 145°F (63°C) is achieved. Keep an eye on the cod as it cooks; the smell will be enticing, and you’ll know you’re in for a treat!
  4. While the cod is baking, let’s whip up the zesty lemon-dill sauce. In a mixing bowl, combine the Greek yogurt (or sour cream if preferred), chopped fresh dill (or dried), lemon juice, lemon zest, Dijon mustard, and minced garlic if you like a little stronger flavor. Whisk the mixture until it’s smooth and fluffy. Season with salt and pepper to taste, and chill in the refrigerator until your cod is ready to plate.
  5. Once your cod is baked to perfection, remove it from the oven and let it rest for a minute. For serving, plate the flaky cod fillet and either spoon the lemon-dill sauce over the top or serve it on the side. Garnish the dish with fresh lemon slices and a sprig of extra dill for that picture-perfect presentation.

Notes

Feel free to adapt the sauce ingredients to your preference; make it spicier or creamier by adjusting the mayo and mustard ratios.
