- ½ ripe avocado, thinly sliced
- ¼ cup toasted pecans or walnuts

- ½ cup fresh blackberries
- Freshly cracked black pepper, to taste
For the vinaigrette:
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey
Instructions
- Start by preparing the honey lemon vinaigrette. In a small mixing bowl, combine the olive oil, fresh lemon juice, honey, and Dijon mustard. Using a whisk, mix the ingredients together until the dressing is smooth and emulsified.
- Next, take a large bowl and layer in your fresh baby spinach or mixed greens.
- Once your greens are ready, add the thinly sliced avocado atop the spinach, followed by the fresh blackberries and sliced red onion.
- Sprinkle your choice of crumbled feta or goat cheese over the salad followed by toasted pecans or walnuts.
