Ingredients

  • ½ ripe avocado, thinly sliced
  • ¼ cup toasted pecans or walnuts
  • ¼ small red onion, thinly sliced

  • ½ cup fresh blackberries
  • Freshly cracked black pepper, to taste

For the vinaigrette:

  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey

Instructions

  1. Start by preparing the honey lemon vinaigrette. In a small mixing bowl, combine the olive oil, fresh lemon juice, honey, and Dijon mustard. Using a whisk, mix the ingredients together until the dressing is smooth and emulsified.
  2. Next, take a large bowl and layer in your fresh baby spinach or mixed greens.
  3. Once your greens are ready, add the thinly sliced avocado atop the spinach, followed by the fresh blackberries and sliced red onion.
  4. Sprinkle your choice of crumbled feta or goat cheese over the salad followed by toasted pecans or walnuts.
  5. Drizzle the freshly made vinaigrette over the salad and finish with freshly cracked black pepper.
