Ingredients

  • 3 cups Brussels sprouts, trimmed and halved
  • 1 tablespoon olive oil
  • ¼ teaspoon salt (or to taste)
  • ½ cup pine nuts (or use candied pecans or walnuts)
  • 1 cup balsamic vinegar
  • ¼ cup honey or brown sugar

Instructions

  1. Begin by preheating your oven to 400°F (200°C) for an even roast. Meanwhile, prepare your Brussels sprouts by trimming off the stems and halving them.
  2. Toss the halved Brussels sprouts in a bowl with olive oil and salt. Line a baking sheet with parchment paper, place the Brussels sprouts cut-side down on the sheet, and roast for about 20 to 25 minutes.
  3. While the Brussels sprouts are roasting, preheat a separate oven to 350°F (175°C) and toast the pine nuts for about 5 minutes.
  4. In a small saucepan, combine balsamic vinegar and honey (or brown sugar) and simmer for about 10 to 15 minutes until it reduces by half.
  5. Transfer the roasted Brussels sprouts to a serving dish, sprinkle with toasted nuts, and drizzle with balsamic glaze before serving.
