- 1–2 balls burrata cheese
- 1 baguette or Italian loaf, sliced (½–¾ inch thick)
- 2 tablespoons balsamic glaze (plus more for topping)
- ¼ red onion, very thinly sliced
- ½ cup fresh basil, chopped or torn
- 1 tablespoon balsamic vinegar
- 2–3 cups cherry tomatoes, halved
- 1–2 garlic cloves, peeled
- 3 tablespoons olive oil, divided
- Kosher salt and black pepper, to taste
- Flaky salt and extra basil, for garnish
Instructions
- Begin by preheating your oven to 400°F (200°C). Brush the slices of baguette or Italian loaf with 1 tablespoon of olive oil. Place the oiled bread slices on a baking sheet in a single layer and toast in the oven until they are golden brown and crisp, about 10-12 minutes. While still warm, rub each slice with a peeled garlic clove.
- In a mixing bowl, combine the halved cherry tomatoes, thinly sliced red onion, chopped basil, and the remaining 2 tablespoons of olive oil. Drizzle in the balsamic vinegar and season with kosher salt and freshly ground black pepper. Toss gently to combine.
- Gently tear the burrata into bite-sized pieces and spoon onto each slice of toasted bread.
- Spoon the prepared tomato mixture over the burrata-topped bread. Drizzle additional balsamic glaze on top, sprinkle with flaky salt and extra basil leaves. Serve immediately.
