  • ½ cup chicken or beef stock
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce (*optional)
  • 2 teaspoons brown sugar
  • 1 tablespoon cornstarch
  • 1 head broccoli, cut into florets
  • 1 tablespoon peanut or vegetable oil
  • 3 garlic cloves, minced
  • 2 teaspoons fresh ginger, minced

Instructions

  1. Begin by preparing your beef. In a mixing bowl, combine the sliced flank steak with soy sauce, peanut oil, and cornstarch. You can also add baking soda at this stage if you have chosen to tenderize the meat further. Allow this mixture to sit for about 10 minutes.
  2. While the beef marinates, prepare the sauce. In a separate bowl, mix the chicken or beef stock, Shaoxing wine (or dry sherry), soy sauces, brown sugar, and cornstarch. Whisk them together until combined and smooth.
  3. Give your broccoli a quick steam. Pour about ¼ cup of water into your skillet and place it over medium-high heat. Once it reaches a gentle boil, add the broccoli florets, covering the pan with a lid. Steam for roughly 1 minute, then remove it and set it aside.
  4. In the same skillet, add a tablespoon of peanut oil and allow it to heat. Once hot, add the marinated beef in a single layer and cook undisturbed for about 30 seconds until browned; then flip and cook the other side.
  5. Add the minced garlic and ginger to the skillet and sauté for just a minute until fragrant.
  6. Add the steamed broccoli back into the skillet, stir the prepared sauce, and pour it over the beef and broccoli. Cook this mixture for about 1 minute, letting the sauce thicken slightly.

Notes

For an added depth of flavor, marinate the beef for longer if you have time—up to 1 hour in the refrigerator works wonders.
