- 12–15 large shrimp, peeled and deveined
- ½ cup shredded sweetened coconut
- ½ cup panko breadcrumbs
- 2 tbsp all-purpose flour
- 1 egg, beaten
- Salt and black pepper, to taste
- Vegetable oil, for frying
- For the Creamy Lime Sauce:
- ¼ cup mayonnaise
- 2 tbsp sour cream or Greek yogurt
- 1 tbsp lime juice
- ½ tsp lime zest
- Pinch of salt
- For the Tacos:
- 6 small flour or corn tortillas
- 1 cup shredded cabbage or lettuce
- 1 small avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Prepare the Creamy Lime Sauce: Combine mayo, sour cream or Greek yogurt, lime juice, zest, and a pinch of salt. Stir well and set aside in the refrigerator.
- Bread the Shrimp: Season shrimp with salt and pepper. Coat in flour, dip in egg, then press into a mixture of coconut and panko.
- Fry the Shrimp: Heat vegetable oil in a skillet and fry shrimp for 2–3 minutes on each side until golden brown. Drain on paper towels.
- Assemble the Tacos: Warm tortillas, layer with cabbage or lettuce, then add fried shrimp, avocado, and drizzle with creamy lime sauce. Garnish with cilantro and lime wedges.
Notes
Ensure the oil is hot enough before frying shrimp for best results.
