  • 4 tbsp butter
  • 1 medium onion, finely chopped
  • 2 tbsp flour
  • 1 tbsp Hungarian or sweet paprika
  • 3 cups chicken broth
  • 1 cup milk
  • ½ cup sour cream
  • 1 tbsp Tamari sauce
  • 1 tbsp lemon juice
  • 3 tbsp chopped parsley
  • 2 tbsp chopped dill
  • 1 tbsp chopped thyme
  • Salt, black pepper, and chili pepper, to taste

Instructions

  1. Begin by melting the butter in a large pot over medium heat. As the butter sizzles and begins to bubble, add the finely chopped onions to the pot. Stir the onions gently, allowing them to cook for about 3–4 minutes, until they become soft and translucent.
  2. Next, it’s time to introduce the sliced mushrooms to the pot. Sprinkle in a pinch of salt and sauté the mushrooms for about 7–8 minutes. The goal here is to let them brown and release their moisture, concentrating their flavor and creating a rich base for your soup.
  3. Once the mushrooms are well-cooked, it’s time to sprinkle in the flour and paprika. Stir everything together thoroughly and allow it to cook for an additional 1-2 minutes.
  4. Now, slowly pour in the chicken broth while stirring continuously. This gradual addition helps prevent lumps from forming and ensures a smooth texture. Once the broth is fully mixed in, add the milk and Tamari sauce, stirring gently. Bring the mixture to a simmer, allowing it to cook for approximately 10 minutes.
  5. To finish off your creamy masterpiece, remove the pot from heat and carefully stir in the sour cream and lemon juice. Fold in the freshly chopped parsley, dill, and thyme to finish. Adjust the seasoning with salt, pepper, and a pinch of chili pepper for an extra kick.
