- 1 lb ground beef
- 1 cup long grain white rice
- 2 cups beef broth
- 2 stalks celery, diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 1/2 tsp thyme
- 1/4 tsp cayenne pepper (optional)
- 1 green bell pepper, diced
- 1 tsp paprika
- 2 tbsp vegetable oil
- Salt and black pepper, to taste
- 2 green onions, chopped (for garnish)
- Fresh parsley (optional)
Instructions
- Start by cooking the rice in the beef broth. Bring the broth to a boil, add the rice, and then reduce the heat to allow it to simmer. Once the liquid has been absorbed, remove from heat and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté for 5–6 minutes until softened.
- Add the minced garlic and cook for about one minute until fragrant.
- Add the ground beef and break it apart. Sauté until thoroughly browned, about 6-8 minutes. Drain excess fat if necessary.
- Season with Cajun seasoning, paprika, thyme, cayenne pepper (if using), salt, and black pepper. Stir thoroughly.
- Stir the cooked rice into the skillet mixture and let it cook on medium-low heat for 5-7 minutes, stirring occasionally.
- Serve hot, garnished with chopped green onions and fresh parsley if desired.
