- Begin your journey by preheating your oven to 400°F (200°C). This is a crucial step, as it ensures that the puff pastry rises beautifully and becomes golden and flaky as it bakes. While the oven heats, line your baking sheets with parchment paper to prepare for the delicious bites you’re about to create.
- Once your oven is preheated, take your thawed frozen puff pastry and roll it out slightly with a rolling pin. The aim here is to maintain the integrity of the pastry while enhancing its flakiness. Cut the pastry into 2-inch circles—aim for about 24 pieces. If you don’t have a cookie cutter, a glass with a similar diameter works just as well.
- Take each pastry circle and gently press a small well into the center using either your thumb or the back of a spoon. This indentation will hold your goat cheese filling, so ensure it’s deep enough to accommodate a good spoonful without overflowing!
- With the wells formed, it’s time to fill each pastry circle with about 1 tablespoon of goat cheese. The creamy, tangy flavor of the goat cheese is what makes these bites truly special. You can use plain goat cheese or even flavored varieties if you prefer a twist.
