Description

Greek Chicken Stuffed Peppers are an excellent way to bring Mediterranean flavors into your home with minimal effort.


Ingredients

  • 1 small red onion, diced
  • ½ cup feta cheese, divided
  • 1 tablespoon olive oil
  • ½ cup cherry tomatoes, quartered
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 pound ground chicken breast
  • ½ cup kalamata olives, chopped
  • 2 cloves garlic, minced
  • ½ cup water
  • 2 tablespoons fresh dill, chopped
  • ⅔ cup uncooked white rice (or 2 cups cooked)
  • 1 teaspoon Italian seasoning
  • 1 zucchini, diced
  • 3 bell peppers, halved and seeded
  • Lemon wedges, for serving

Instructions

  1. Start by preheating your oven to 350°F (175°C). While the oven is heating, prepare your rice according to the package instructions. If you prefer to use already cooked rice, set aside around 2 cups, and skip this step.
  2. Now it’s time to prepare your bell peppers. Begin by cutting them in half and removing the seeds. Lay them cut side up in your baking dish.
  3. In a skillet heated over medium heat, add olive oil. Once hot, add in the ground chicken along with kosher salt and black pepper. Cook it until the chicken is fully browned.
  4. Next, introduce the diced onion, minced garlic, and zucchini to the skillet. Sprinkle in the Italian seasoning. Cook for an additional 2 minutes until the veggies slightly soften.
  5. In a large mixing bowl, combine the cooked rice, the sautéed mixture from the skillet, quartered cherry tomatoes, chopped kalamata olives, ¼ cup of crumbled feta cheese, and chopped fresh dill. Stir until everything is well incorporated.
  6. Carefully spoon the filling into each bell pepper half, packing the mixture in tightly. Sprinkle the tops with the remaining feta cheese and extra dill.
  7. Pour half a cup of water into the baking dish around the peppers. Cover with foil and bake for 40 to 45 minutes.

Notes

Always ensure your chicken is fully cooked before serving; it should reach an internal temperature of 165°F.
