- 1 lb ground chicken or turkey
- ½ cup breadcrumbs
- ¼ cup chopped fresh parsley
- 3 garlic cloves, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 cup cooked rice (white or brown)
- 1 cup diced fresh veggies (tomatoes, bell peppers, or your choice)
- 1 cup full-fat Greek yogurt
- 1 medium cucumber, grated and squeezed dry
- 2 tbsp fresh lemon juice
Instructions
- Start by preheating your oven to 400°F (200°C).
- In a large bowl, combine the ground chicken or turkey, breadcrumbs, chopped parsley, minced garlic, salt, and black pepper. Mix until well combined and form into 1-inch balls.
- Place meatballs on a baking sheet and bake for 20-25 minutes until golden brown.
- For the tzatziki, combine Greek yogurt, grated cucumber, lemon juice, salt, and black pepper in a bowl. Refrigerate until serving.
- Cook your rice according to package instructions.
- Assemble the bowls: Add rice, meatballs, chopped veggies, and a dollop of tzatziki in each bowl.
