Ingredients

  • 1 lb ground chicken or turkey
  • ½ cup breadcrumbs
  • ¼ cup chopped fresh parsley
  • 3 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup cooked rice (white or brown)
  • 1 cup diced fresh veggies (tomatoes, bell peppers, or your choice)
  • 1 cup full-fat Greek yogurt
  • 1 medium cucumber, grated and squeezed dry
  • 2 tbsp fresh lemon juice

Instructions

  1. Start by preheating your oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken or turkey, breadcrumbs, chopped parsley, minced garlic, salt, and black pepper. Mix until well combined and form into 1-inch balls.
  3. Place meatballs on a baking sheet and bake for 20-25 minutes until golden brown.
  4. For the tzatziki, combine Greek yogurt, grated cucumber, lemon juice, salt, and black pepper in a bowl. Refrigerate until serving.
  5. Cook your rice according to package instructions.
  6. Assemble the bowls: Add rice, meatballs, chopped veggies, and a dollop of tzatziki in each bowl.
