Description

This comforting dish combines layers of zucchini, ricotta, and marinara for a nutritious meal.


Ingredients

  • 2 medium zucchinis, sliced lengthwise (¼-inch thick)
  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • ½ cup shredded mozzarella cheese
  • ¼ tsp dried oregano
  • 1 tbsp olive oil (for brushing)
  • Salt and pepper, to taste
  • Fresh basil, for garnish
  • Optional: red pepper flakes, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into ¼-inch thick pieces. Brush with olive oil and season with salt and pepper.
  3. Grease an 8×8-inch baking dish, layer half of the zucchini, spread half of the ricotta, pour half of the marinara, and top with half of the mozzarella. Repeat layers ending with mozzarella and marinara.
  4. Sprinkle dried oregano on top and bake for 20–25 minutes until cheese is bubbly and golden.
  5. Let cool for a few minutes, garnish with basil and red pepper flakes, then serve hot.

For a gluten-free option, ensure your marinara sauce is gluten-free.
