Ingredients

  • 45 ripe tomatoes, sliced or chopped
  • ¼ red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine or balsamic vinegar
  • 1 clove garlic, minced
  • 1 teaspoon sugar or honey (optional)
  • 2 tablespoons chopped fresh basil or parsley
  • Salt and black pepper, to taste

Instructions

  1. Begin by preparing your tomatoes and onion. Choose firm but ripe tomatoes and slice or chop them into bite-sized pieces. Then, take your red onion and thinly slice it. Add both the tomatoes and the red onion to a large mixing bowl.
  2. In a small bowl, whisk together the olive oil, vinegar, minced garlic, and optional sweetener—be it sugar or honey. Season this dressing with a sprinkle of salt and a twist of black pepper.
  3. Once your dressing is ready, pour it over the tomatoes and onions in the large bowl. Toss the salad gently.
  4. Set your marinated salad aside at room temperature for about 15–30 minutes.
  5. Add fresh herbs and any optional ingredients before serving.
