Instructions

  1. Start by prepping your bread slices. Brush each side lightly with olive oil; this step not only enhances flavor but also helps achieve a crisp texture. Place the slices on a grill or under the broiler. Toast them for about 2–3 minutes on each side or until they turn a golden brown and have those delightful grill marks. Keep a close eye on them, as they can quickly go from perfectly toasted to burnt!
  2. Once your bread is toasted to perfection, it’s time to assemble. Take the pesto and spread a generous layer onto each slice of toast. The vibrant green color will add a fresh look, while the intense flavor complements the tomatoes beautifully. Next, arrange the tomato slices on top of the pesto, ensuring each tartine gets its fair share of juicy goodness. Top it off with slices of fresh mozzarella, allowing the cheese to sit invitingly atop the vibrant colors.
