Instructions

  1. Start by preheating your oven to 400°F (200°C). Wrap your whole beets in aluminum foil to lock in moisture and prevent them from drying out during cooking. Place the wrapped beets on a baking sheet or directly on the oven rack for 45-50 minutes. When done, allow them to cool slightly before peeling and slice into ½-inch rounds.
  2. While the beets are roasting, heat the olive oil in a medium-sized skillet over medium heat. Add the thinly sliced pears and drizzle with honey. Cook for about 2 minutes on each side until golden and tender.
  3. Assemble the towers by placing one slice of roasted beet on your serving plate, topping with crumbled blue cheese, followed by a slice of caramelized pear. Repeat layering process as desired.
  4. Finish by sprinkling with chopped toasted pecans, drizzling with balsamic glaze, and garnishing with fresh thyme. Serve immediately.
