Ingredients

  • 1 lb Brussels sprouts, halved
  • 1 medium butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • ½ cup maple walnuts (store-bought or homemade)
  • ½ cup dried cranberries
  • ½ cup crumbled goat cheese
  • 1 tablespoon maple syrup (optional)
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the vegetables by mixing Brussels sprouts and butternut squash with olive oil, salt, and pepper.
  3. Roast the vegetables on a baking sheet for 25–30 minutes, stirring halfway.
  4. Add toppings of maple walnuts, cranberries, and goat cheese before serving.
