- 1 medium butternut squash, peeled and diced
- 2 tablespoons olive oil
- ½ cup maple walnuts (store-bought or homemade)
- ½ cup dried cranberries
- ½ cup crumbled goat cheese
- 1 tablespoon maple syrup (optional)
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the vegetables by mixing Brussels sprouts and butternut squash with olive oil, salt, and pepper.
- Roast the vegetables on a baking sheet for 25–30 minutes, stirring halfway.
- Add toppings of maple walnuts, cranberries, and goat cheese before serving.
