- 1 lb large shrimp, peeled and deveined
- 1 cup finely chopped fresh parsley
- ½ cup olive oil
- ¼ cup red wine vinegar
- Juice of 1 lime
- 4 garlic cloves, minced
- 1 tsp red pepper flakes
- 1 tsp dried oregano
- Salt and pepper, to taste

- In a medium mixing bowl, combine the finely chopped fresh parsley, olive oil, red wine vinegar, lime juice, minced garlic, red pepper flakes, dried oregano, and a sprinkle of salt and pepper. Mix them thoroughly until all ingredients are well-incorporated and the sauce takes on a vibrant green hue. This chimichurri sauce can be made ahead of time and stored in the refrigerator to allow the flavors to meld together.
- In a separate bowl, place your peeled and deveined shrimp. Pour half of the prepared chimichurri sauce over the shrimp and gently toss to evenly coat every piece. Cover the bowl with plastic wrap and let it chill in the refrigerator for about 30 minutes. This marinating process not only imparts flavor but also helps tenderize the shrimp.
- Once the shrimp have marinated and your grill is preheated to medium-high heat, it’s time to grill! Carefully place each shrimp on the grill, spacing them to allow for even cooking. Grill the shrimp for about 2-3 minutes on each side, watching for a change in color to a pinkish hue, and a slight char. The shrimp cook quickly, so don’t walk away during this step! Once cooked, remove them from the grill.
