- 1 tablespoon neutral oil
- 1 teaspoon sugar
- 1/3 cup coconut milk
- 1 teaspoon fish sauce
- 8–10 frozen soup dumplings (MiLA or any brand)
- 2 kaffir lime leaves
- 1 cup chicken or vegetable stock
- 1 tablespoon Thai red curry paste
- Thai basil leaves, for garnish
Instructions
- Start by heating the neutral oil in your pot over medium-high heat. This will set the stage for cooking the curry paste. Once the oil is shimmering, add in the Thai red curry paste. Sauté it for about 1 to 2 minutes.
- Next, you’ll pour in the chicken or vegetable stock. Give it a good stir to help the curry paste dissolve completely.
- After ensuring the curry paste is well-integrated, it’s time to add in the coconut milk, fish sauce, and sugar along with the kaffir lime leaves. Allow this mixture to simmer gently for a few minutes.
- Now comes the exciting part: adding the frozen soup dumplings into the pot. Gently place them in the simmering liquid and cover the pot with a lid. Allow the dumplings to cook for roughly 12 minutes or until they turn tender.
- Once the dumplings are cooked, turn off the heat. This is when you’ll introduce the final touch: fresh Thai basil leaves. Serve your soup dumplings hot, right from the pot!

For a richer broth, use full-fat coconut milk.
