Ingredients

  • 4 tilapia fillets (about 6 oz each)
  • 2 large red bell peppers
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Start by preheating your oven to 400°F (200°C). While the oven warms up, take the large red bell peppers and slice them in half lengthwise. Remove the seeds and stems, then drizzle them with a little olive oil and sprinkle with salt and pepper to taste. Place the sliced peppers on a baking sheet, cut side down, and roast them in the preheated oven for about 20 minutes.
  2. Once the peppers are roasted and cool enough to handle, it’s time to make your sauce. Take the roasted peppers, peeled garlic cloves, and fresh lemon juice, and add them to your blender or food processor. Pulse everything together until you achieve a smooth and creamy consistency.
  3. Heat a large skillet over medium heat and add a drizzle of olive oil to coat the pan. Place the tilapia fillets in the hot skillet. Cook each fillet for about 3 to 4 minutes on one side until golden brown. Carefully flip the fillets and cook them for an additional 3 to 4 minutes on the other side.
  4. After the tilapia is cooked, lower the heat and pour the roasted pepper sauce over the fish in the skillet. Allow it to simmer gently for about a minute, then plate the fish and spoon extra sauce over the top. Serve hot and enjoy!

The roasted pepper sauce can be made ahead of time and stored in the refrigerator for up to three days.
