Ingredients

  • For the Sauce:
  • ¼ cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1 tsp brown sugar
  • For the Bowls:
  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 1 lb ground chicken
  • 2 cups shredded cabbage
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 1 tbsp sesame seeds

Instructions

  1. Whisk the sauce ingredients together in a small bowl until well combined.
  2. Cook rice noodles according to package instructions, drain, and set aside.
  3. Heat vegetable oil in a large skillet over medium-high heat, and cook the ground chicken until browned.
  4. Add shredded cabbage and julienned carrots to the skillet, cooking until slightly softened.
  5. Combine the chicken, vegetables, and sauce with the cooked noodles, tossing to coat.
  6. Serve in bowls, garnished with sliced green onions and sesame seeds.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days.
