Instructions
- Begin by washing and scrubbing the sweet potatoes under running water to ensure they’re clean. Once cleaned, cut the sweet potatoes into wedges approximately 1-inch thick.
- In a small mixing bowl, combine the olive oil, minced garlic, smoked paprika, onion powder, salt, black pepper, and optional red pepper flakes.
- Toss the sweet potato wedges into the bowl with the oil mixture. Use your hands or a spatula to ensure each wedge is well-coated with the seasoned oil. Sprinkle half of the grated Parmesan cheese over the wedges and toss them again lightly.
- Spread the seasoned wedges in a single layer on your prepared baking sheet. Bake in the preheated oven for 25 to 30 minutes, flipping the wedges halfway through.
- Once the wedges are beautifully crispy and golden, sprinkle the remaining Parmesan cheese over the hot wedges and garnish with freshly chopped parsley before serving.
