  • 2 tbsp hot honey
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper, to taste

Instructions

  1. Begin by preheating your oven to 400°F (200°C). While the oven warms up, place your diced sweet potatoes in a large bowl. Drizzle 1 tablespoon of olive oil over the sweet potatoes, then add the paprika, garlic powder, cinnamon, salt, and pepper. Toss the sweet potatoes well to ensure they are evenly coated in the spices and oil. Spread them out in a single layer on a baking sheet and roast in the preheated oven for about 40 to 45 minutes, tossing halfway through for even cooking, until they are golden and tender.
  2. While the sweet potatoes are roasting, heat a large skillet over medium heat and add the remaining tablespoon of olive oil. Once the oil is hot, add the diced onion and sauté for about 3 to 4 minutes until it becomes soft and translucent. Next, add in the ground beef along with the taco seasoning. Break the beef apart with a spatula as it cooks, ensuring it is browned evenly. Continue to cook until the beef is fully cooked through and browned, about 5 to 7 minutes. Remember to drain any excess fat, ensuring a leaner dish.
  3. Now comes the fun part—assembly! Grab a serving bowl and start with a generous layer of the roasted sweet potatoes. Next, add a hearty scoop of the cooked ground beef followed by creamy cottage cheese. For a fresh touch, top with slices of ripe avocado.
