- 4 large tortillas or flatbreads
- 1 medium zucchini (200g), sliced lengthwise
- 1 cup cooked chickpeas (160g)
- 100g crumbled feta cheese
- 1 tablespoon olive oil
- Salt and black pepper, to taste
Instructions
- Start by heating your grill or grill pan to medium-high. While it’s warming, take your sliced zucchini and brush both sides with olive oil. Season with salt and black pepper. Place zucchini on the grill, cooking for 2-3 minutes on each side, until tender.
- In a mixing bowl, combine ½ cup plain yogurt with 1 tablespoon of chopped fresh herbs, 1 teaspoon of lemon juice, salt, and pepper. Mix until smooth.
- Heat each flatbread on the grill for a few seconds on each side until warm.
- Assemble wraps by placing cooked chickpeas, grilled zucchini slices, and crumbled feta on a warm flatbread, drizzling with yogurt sauce.
- Fold sides in and roll from the bottom to the top, tucking in fillings. Serve warm.
