  • 4 large tortillas or flatbreads
  • 1 medium zucchini (200g), sliced lengthwise
  • 1 cup cooked chickpeas (160g)
  • 100g feta cheese, crumbled
  • 1 tbsp olive oil
  • Salt and black pepper, to taste

For the Herbed Yogurt Sauce:

  • ½ cup plain yogurt
  • 1 tbsp chopped fresh herbs (mint, parsley, or dill)
  • 1 tsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Start by preheating your grill or grill pan to medium-high heat. While the grill heats up, take your zucchini slices and brush them with olive oil on both sides, generously seasoning with salt and pepper. The oil not only enhances the flavor but also helps to create that desirable grilled texture. Place the zucchini slices on the hot grill for about 2-3 minutes on each side.
  2. While the zucchini is grilling, it’s the perfect time to prepare your herbed yogurt sauce. In a mixing bowl, combine the plain yogurt, chopped herbs, and lemon juice. Stir everything together and season with salt and pepper according to your taste. Set the sauce aside.
  3. Once your zucchini is grilled to perfection, it’s time to warm up your flatbreads. You can do this either on the grill for a few seconds until they’re soft and pliable or in the microwave for about 30 seconds.
  4. With all your components ready, it’s assembly time! Lay your warm flatbreads out and start layering them with the chickpeas, grilled zucchini slices, and a sprinkle of crumbled feta cheese. Drizzle your herbed yogurt sauce on top.
  5. Tightly roll each flatbread, ensuring that the fillings stay inside. Serve immediately while they are still warm and fresh for the best flavor experience.
