- 2 medium cauliflower heads, cut into florets
- ¼ cup olive oil
- ¼ cup honey (or maple syrup for vegan option)
- 2 tbsp curry powder
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp cayenne pepper (optional, for heat)
- 2 tbsp chopped fresh cilantro, for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the olive oil, honey (or maple syrup), curry powder, garlic powder, salt, black pepper, and cayenne pepper if you’re looking for a spicy kick. Whisk thoroughly until well combined into a smooth sauce.
- Add the cauliflower florets to the bowl with your sauce. Toss until they are well-coated.
- Spread the coated cauliflower florets in a single layer on a parchment-lined baking sheet.
- Place in the oven and roast for about 25-30 minutes, stirring halfway through.
- After removing from the oven, let it cool slightly and garnish with cilantro before serving.
