Ingredients

  • 2 medium cauliflower heads, cut into florets
  • ¼ cup olive oil
  • ¼ cup honey (or maple syrup for vegan option)
  • 2 tbsp curry powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper (optional, for heat)
  • 2 tbsp chopped fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the olive oil, honey (or maple syrup), curry powder, garlic powder, salt, black pepper, and cayenne pepper if you’re looking for a spicy kick. Whisk thoroughly until well combined into a smooth sauce.
  3. Add the cauliflower florets to the bowl with your sauce. Toss until they are well-coated.
  4. Spread the coated cauliflower florets in a single layer on a parchment-lined baking sheet.
  5. Place in the oven and roast for about 25-30 minutes, stirring halfway through.
  6. After removing from the oven, let it cool slightly and garnish with cilantro before serving.
