Ingredients

  • 1 medium acorn squash, halved and seeds removed
  • 1 tbsp olive oil
  • 1 tbsp honey
  • ¼ cup soft goat cheese
  • 2 tbsp cranberry sauce or compote
  • Salt and black pepper, to taste
  • Fresh thyme or parsley, for garnish

Instructions

  1. Start by preheating your oven to 400°F (200°C). Carefully slice the acorn squash in half and scoop out the seeds using a spoon.
  2. In a small bowl, mix the olive oil and honey together. Brush this mixture generously onto the cut sides of the squash. Season with salt and pepper to taste.
  3. Place the squash halves cut-side up on a baking sheet lined with parchment paper. Roast for approximately 25–30 minutes, or until golden brown and tender.
  4. Remove from the oven and let cool slightly. Spoon the creamy goat cheese into the center of each squash half.
  5. Top each squash with a drizzle of cranberry sauce and garnish with fresh thyme or parsley.

Notes

Be careful not to over-roast the squash, as it can become mushy.
