- 1 medium acorn squash, halved and seeds removed
- 1 tbsp olive oil
- 1 tbsp honey
- ¼ cup soft goat cheese
- 2 tbsp cranberry sauce or compote
- Salt and black pepper, to taste
- Fresh thyme or parsley, for garnish
Instructions
- Start by preheating your oven to 400°F (200°C). Carefully slice the acorn squash in half and scoop out the seeds using a spoon.
- In a small bowl, mix the olive oil and honey together. Brush this mixture generously onto the cut sides of the squash. Season with salt and pepper to taste.
- Place the squash halves cut-side up on a baking sheet lined with parchment paper. Roast for approximately 25–30 minutes, or until golden brown and tender.
- Remove from the oven and let cool slightly. Spoon the creamy goat cheese into the center of each squash half.
- Top each squash with a drizzle of cranberry sauce and garnish with fresh thyme or parsley.
Notes
Be careful not to over-roast the squash, as it can become mushy.
