This Spicy Salmon Sushi Bake redefines the way we enjoy sushi.
Ingredients

- 2 cups cooked sushi rice
- 1 tablespoon rice vinegar
- ½ teaspoon salt
- ½ teaspoon sugar
- 12 oz cooked skinless salmon, flaked
- ¼ cup mayonnaise (Kewpie preferred)
- 2 tablespoons sriracha
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- ½ cup shredded mozzarella cheese (optional)
- 2 green onions, sliced
- 1 tablespoon toasted sesame seeds
- 2 sheets roasted nori, cut into small squares
Instructions
- Preheat your oven to 400°F (200°C). Grease your 8×8-inch baking dish.
- Combine the cooked sushi rice with rice vinegar, sugar, and salt. Transfer to the baking dish, pressing down evenly.
- In a bowl, mix flaked salmon, mayonnaise, sriracha, soy sauce, and sesame oil. Spread over the rice.
- Sprinkle mozzarella on top. Bake for 18–20 minutes until hot and bubbly.
- Garnish with green onions and sesame seeds. Serve warm.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days, reheating portions in the microwave or oven.
