- 1 lb ground beef (or ground turkey)
- 1 packet taco seasoning (or 2 tablespoons homemade)
- ¼ cup water
- ¾ cup cooked black beans
- ¾ cup corn kernels
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ cup chopped fresh cilantro
- ½ cup diced tomatoes
- ¼ cup sliced green onions
- ¼ cup sliced jalapeños (optional)
- Lime wedges, for serving
Instructions
- Preheat your oven to 425°F (220°C) and prepare the potatoes. Toss with olive oil and spices, then roast.
- In a skillet, cook ground beef (or turkey) until browned, drain fat, and add taco seasoning and water.
- Warm black beans and corn in a saucepan.
- Assemble the bowls with potatoes, beef, beans, corn, and cheese.
- Add toppings like sour cream, cilantro, tomatoes, and lime wedges.
