Description

Ingredients

  • Salt and black pepper, to taste
  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • ¼ cup water
  • ¾ cup cooked black beans
  • ¾ cup corn kernels
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup chopped fresh cilantro
  • ½ cup diced tomatoes
  • ¼ cup sliced green onions
  • ¼ cup sliced jalapeños (optional)
  • Lime wedges, for serving

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare the potatoes. Toss with olive oil and spices, then roast.
  2. In a skillet, cook ground beef (or turkey) until browned, drain fat, and add taco seasoning and water.
  3. Warm black beans and corn in a saucepan.
  4. Assemble the bowls with potatoes, beef, beans, corn, and cheese.
  5. Add toppings like sour cream, cilantro, tomatoes, and lime wedges.
