Description

Ingredients

  • 4 white fish fillets (snapper, cod, etc.)
  • 2 tbsp olive oil
  • 1 lemon (zest and juice)
  • 3 garlic cloves, minced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Begin this culinary journey by preheating your oven to 400°F (200°C). Meanwhile, prepare your baking dish by greasing it with a tablespoon of olive oil to prevent the fish from sticking.
  2. Take your white fish fillets and pat them dry with a paper towel, helping them achieve a perfect crisp once cooked. Then, season both sides liberally with salt, pepper, and a sprinkle of dried oregano.
  3. Next, heat the remaining olive oil in a sauté pan over medium heat. Toss in the sliced onions and let them sauté for about 5 minutes until they soften. Then, add the bell peppers and zucchini to the pan, cooking for an additional 3-4 minutes until they’re just tender. Stir in the minced garlic and cook for one more minute.
  4. Spread the sautéed veggies evenly across the bottom of your greased baking dish. Place the seasoned fish fillets gently over the vegetable layer.
  5. Layer the halved cherry tomatoes on top of the fish. Sprinkle with the freshly chopped parsley and dill. Drizzle the dish with the juice of your zested lemon and finish off with a generous sprinkle of lemon zest.
  6. Cover your dish with aluminum foil and bake for 20 minutes. After, remove the foil and bake uncovered for another 5-10 minutes until the fish is golden-brown and flakes easily with a fork.
  7. Allow your dish to cool slightly, garnish with fresh herbs, and serve with lemon wedges.
