- 1½ lbs chicken breasts or thighs, cubed
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- Juice of 1 lemon
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- Wooden or metal skewers
- 1 cup hummus
- 1 cup tzatziki
- 1 cup tabbouleh or couscous salad
- ½ cup marinated olives
- ½ cup roasted red peppers
- ½ cup crumbled feta cheese
- Warm pita or flatbread, cut into wedges
- Fresh vegetables: cucumber slices, cherry tomatoes, carrot sticks
Instructions
- To start, combine the olive oil, minced garlic, lemon juice, smoked paprika, ground cumin, dried oregano, salt, and pepper in a mixing bowl. Use a whisk to blend these ingredients thoroughly until they create a smooth marinade.
- Next, take your cubed chicken, placing it in the bowl with the marinade. Gently toss it to ensure every piece is well coated and let it sit in the refrigerator for at least 30 minutes.
- After marinating, it’s time to thread the chicken onto your skewers, leaving some space between each piece to ensure even cooking.
- Preheat your grill or grill pan to medium-high heat. Place the skewers on the grill, cooking them for about 10-12 minutes. Turn them occasionally to ensure they are cooked through.
- While the chicken skewers are grilling, prepare your mezze tray by arranging a portion of hummus and tzatziki, and adding the tabbouleh salad, marinated olives, roasted red peppers, and sprinkles of feta cheese.
Notes
Ensure chicken is evenly cut for even cooking. Use a meat thermometer for checking doneness.
