Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 2 large whole wheat or spinach tortillas
  • ½ cup hummus
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, thinly sliced
  • ¼ red onion, thinly sliced
  • ⅓ cup crumbled feta cheese
  • ¼ cup sliced kalamata olives (optional)
  • 1 cup fresh spinach or mixed greens

Instructions

  1. In a medium-sized mixing bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Whisk until well blended.
  2. Place the chicken breasts in a resealable bag, pour the marinade over, seal, and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat and grill the marinated chicken for 6–7 minutes on each side until cooked through.
  4. Spread hummus over each tortilla, add the chicken and other fillings, then roll tightly.
  5. Slice each wrap diagonally to serve.

Notes

Feel free to make the wraps ahead of time; just wrap them tightly in plastic wrap and store in the refrigerator.
