  • 1/3 cup crumbled feta cheese
  • 2 large eggs, lightly beaten
  • 1 tablespoon lemon juice
  • 1/4 cup finely chopped red onion
  • 1/2 cup breadcrumbs (panko or regular)
  • 1 cup fresh spinach, chopped
  • 2 tablespoons chopped parsley
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1 tablespoon chopped fresh dill (optional)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (for frying)
  • Optional garnish: Lemon wedges, Tzatziki sauce

Instructions

  1. Begin by draining the canned salmon thoroughly. This step is vital to avoid excess moisture in your patties. Place the salmon in a bowl and use a fork to flake it well.
  2. Next, heat a dry skillet over medium heat and add the chopped spinach. Sauté for about two minutes or until it wilts down. This step will enhance the spinach’s flavor while reducing its moisture content.
  3. In a large mixing bowl, combine the flaked salmon, cooked spinach, finely chopped onion, minced garlic, crumbled feta cheese, breadcrumbs, lightly beaten eggs, parsley, lemon juice, lemon zest, oregano, and season with salt and black pepper. Mix everything together gently until just combined.
  4. With your mixture ready, scoop out portions and shape them into patties roughly three inches wide and half an inch thick.
  5. In the same skillet, heat the olive oil over medium heat and carefully place the patties into the skillet. Fry them for 3 to 4 minutes on each side until they are golden brown and crispy.

Notes

You can prepare the mixture in advance and refrigerate it for up to 24 hours before cooking; just shape the patties right before frying.
