- 2 tbsp fresh lemon juice
- 1 tbsp honey or maple syrup
- ½ tsp Dijon mustard
- Salt and black pepper, to taste
Instructions
- Start by placing the mixed greens in a large bowl. Next, add in the thinly sliced apples, ensuring they are evenly distributed throughout the greens. Then, sprinkle the pomegranate arils over the mixture, allowing their jewel-like quality to shine against the greens. Finally, crumble the feta or goat cheese over the top for added flavor.
- In a separate bowl, mix the olive oil, lemon juice, honey (or maple syrup), Dijon mustard, salt, and black pepper until smooth. This dressing will enhance the fresh salad components.
- Just before serving, pour the dressing over the salad and gently toss everything together. Once mixed, transfer to a serving dish and garnish with more pomegranate arils or chopped nuts. Serve immediately!
