Ingredients

  • 2 medium red apples, thinly sliced
  • 1 cup pomegranate arils
  • ½ cup walnuts or pecans, roughly chopped
  • ¼ cup crumbled feta or goat cheese (optional)
  • 4 cups mixed greens (arugula, spinach, or lettuce)
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp honey or maple syrup
  • ½ tsp Dijon mustard
  • Salt and black pepper, to taste

Instructions

  1. Start by placing the mixed greens in a large bowl. Next, add in the thinly sliced apples, ensuring they are evenly distributed throughout the greens. Then, sprinkle the pomegranate arils over the mixture, allowing their jewel-like quality to shine against the greens. Finally, crumble the feta or goat cheese over the top for added flavor.
  2. In a separate bowl, mix the olive oil, lemon juice, honey (or maple syrup), Dijon mustard, salt, and black pepper until smooth. This dressing will enhance the fresh salad components.
  3. Just before serving, pour the dressing over the salad and gently toss everything together. Once mixed, transfer to a serving dish and garnish with more pomegranate arils or chopped nuts. Serve immediately!
