- 1 lb Brussels sprouts, halved
- 1 medium butternut squash, peeled and diced
- 2 tbsp olive oil
- ½ cup maple walnuts (store-bought or homemade)
- ½ cup dried cranberries
- ½ cup crumbled goat cheese
- 1 tbsp maple syrup (optional)
- Salt and black pepper, to taste
Instructions
- Before starting the main preparation, preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the halved Brussels sprouts and diced butternut squash. Drizzle with olive oil, and season generously with salt and pepper. Toss everything together until well-coated.
- Spread the seasoned vegetables across a large baking sheet in a single layer. Roast for about 25–30 minutes, stirring halfway through.
- Once roasted, transfer the vegetables to a serving dish. Sprinkle with maple walnuts and dried cranberries, then top with crumbled goat cheese and an optional drizzle of maple syrup.
