Instructions
- To start with, take each boneless chicken breast and butterfly it—it helps in creating a pocket for your filling. Use a meat mallet or a rolling pin to pound each butterfly breast to about ¼-inch thickness. Make sure to evenly pound to ensure consistent cooking. After that, season each side generously with salt, pepper, garlic powder, oregano, and smoked paprika, giving it that aromatic flavor base.
- In a medium-sized skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant but not browned. Next, toss in the chopped spinach and let it cook down until it’s wilted. This process should take about 2 minutes. Once perfectly wilted, remove the skillet from heat and mix in the crumbled feta cheese and chopped sun-dried tomatoes for that delightful filling.
- Now comes the fun part! Take an equal portion of the filling and place it in the center of each chicken breast. - In the same oven-safe skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. - Now that your chicken is beautifully seared, it’s time to finish cooking in the oven. Preheat your oven to 375°F (190°C). Transfer the skillet directly into the oven and bake the chicken rolls for 20 to 25 minutes. You want to ensure the internal temperature reaches 165°F (75°C) for safe consumption. Let the chicken rest for 5 minutes before slicing to allow the juices to redistribute for maximum flavor.
